This is the type of recipe that you make someone that you want to impress, like the in-laws or some work friends. It’s delicious, presents beautifully, but most importantly- it’s super quick and easy. In this recipe I’m using pre-made or store bought gnocchi, but if you’d like a recipe on how to make your own, I can give you just that. Let me know in the comments below.
4 slices thick cut bacon, chopped
1 14oz can chopped tomatoes
1 tsp white sugar
1/4 tsp red pepper flakes
1 tbsp balsamic vinegar
1 pound gnocchi
4 oz baby spinach (about 5 cups)
Parmesan cheese, grated
- Cook bacon in a large deep skillet over medium high heat until done to your liking. Add tomatoes, sugar, pepper, and vinegar and saute for about five minutes.
- Meanwhile, bring a pot of salted water to a boil and add gnocchi. Cook according to package directions (usually when they float to the top).
- Add spinach to gnocchi and cook for 30 seconds until wilted. Drain gnocchi and spinach mixture and add to sauce.
- Gently toss with tongs until combined. Divide among plates and top with Parmesan.
- Enjoy hot!
