Bruschetta Topped Chicken

A perfectly quick and healthy meal for those on-the-go days, meal prepping or just a quick family dinner. For those that are meal prepping regularly, I know the struggle of just eating boring chicken and rice all the time. I promise if you give this a try you won’t have any regrets! Top this meal with a  drizzle of balsamic reduction to take it to a whole new level.


4 Chicken Breasts

5 Tomatoes, Chopped

1 Clove Garlic, Minced

1 tsp Olive Oil

1 1/2 tsp Balsamic Vinegar

Sea Salt and Pepper To Taste

Handful Of Fresh Basil, Chopped


  • Preheat oven to 375F. Sprinkle some salt and pepper over top of your chicken, cover and bake for about 35 to 40 minutes (depending on the size of your breasts) until juices run clear.

  • Meanwhile, combine chopped tomatoes, garlic, olive oil, balsamic vinegar, sea salt, pepper and basil in a bowl. Refrigerate until chicken is ready to be served and spoon over top of the chicken.

    * You can sever this dish with the chicken warm or cold, but I don’t recommend heating up the bruschetta.
