Protein Pancakes

These are my go-to breakfast on a day off from work and sometimes even a go-to supper on days that I come home and just don’t feel like cooking. They are quick, easy and delicious and I haven’t gotten tired of them yet because they are just so easy to change-up. I recommend serving them with a bit of natural peanut butter, fruit and real maple syrup.

*The pancakes in the picture are one of my favourites, Pumpkin.  I threw in a couple of tablespoons of Pumpkin Puree, Cinnamon, Nutmeg and replaced the vanilla protein powder with one flavoured ‘Pumpkin Pie’. I highly recommend giving it a try.


2 Scoops Good Quality Protein Powder

4 tbsp Milk ( I always use coconut milk)

3 Eggs

2/3 cups Oatmeal

Blend together in a high-speed blender until smooth.


Add-In Ideas:

Cinnamon and Diced Apple

Peanut Butter

Fresh or Frozen Fruit

Chocolate Chips
