Roasted Red Pepper Pasta *Vegan

This dish is something that vegans and meat eaters both would love. Feel free to customize to your liking, I like to stir mushrooms and spinach into the pasta whenever I have some laying around in the fridge. For those non-vegans out there that might want to give this a try, nutritional yeast is basically just cheesy tasting yeast flakes, feel free to use Parmesan cheese instead. If you wanted to make this easy recipe even quicker, feel free to use pre-roasted peppers.

Ingredients:

2 red Bell Peppers

2-3 tbsp Olive Oil

2 Shallots, Finely Chopped

4 Cloves Garlic, Finely Chopped

Sea Salt and Ground Black Pepper To Taste

1 1/2 cups Unsweetened dairy-free milk

2 tbsp Nutritional Yeast

1 1/2 tbsp  Cornstarch or Arrowroot Powder

Pinch of Red Pepper Flakes

12 oz Linguine or Spaghetti Noodles
