Chickpea Cookie Dough *Vegan and Gluten Free

Don’t feel bad for eating this by the spoonful! Chickpeas are high in protein, fibre, manganese and folate – making this cookie dough actually pretty healthy and my new go-to whenever I’m craving something sweet! It’s great for a snack, dessert, or even for breakfast. It takes under 5 minutes to make and is completely grain-free, gluten-free and vegan!

Ingredients:

1 Can Chickpeas, Drained and Rinsed

3-4 tbsp Maple Syrup

1/2 cup Smooth Nut Butter Of Choice

2 tsp Vanilla Extract

Pinch of Sea Salt

1 tbsp Dairy Free Milk

1/2 cup Dark Chocolate Chips

  1. Place the chickpeas, maple syrup, nut butter, vanilla extract and sea salt in a food processor or high-speed blender and pulse for a couple of minutes until smooth. Next, add in the plant milk if you’d prefer it to be less thick and pulse again.
  2. Mix in the chocolate chips and enjoy!
