Oil Free Granola: Three Fun Ways

Granola is something that I eat quite a lot of, either with coconut milk as a cereal in the morning, on top of waffles, oatmeal or yoghurt for some crunch, or just by the handful when I need a snack. But a lot of store-bought granola is filled with sugar and oil, making it way less nutritious then it should be! If you are a granola fan like me, give these easy recipes a try!

Chocolate Coconut Granola: 

Ingredients:

1 cup Rolled Oats (Quick Oats) 

½ cup Steel Cut Oats

¼ cup Cacao or Cocoa Powder

Pinch of Salt

½ cup Maple Syrup

¼ cup Unsweetened Shredded Coconut or Coconut Flakes

  1. Preheat the oven to 375F.
  2. Combine the rolled oats, steel cut oats, cacao/cocoa powder, and salt in a large mixing bowl. Stir to combine.
  3. Add the maple syrup. Mix to evenly coat.
  4. Stir in the coconut.
  5. Spread onto a baking sheet lined with parchment paper. Press into a solid rectangle.
  6. Bake for 10 minutes.
  7. Let it cool for at least 30 minutes before breaking apart for the most clusters.

Peanut Butter Granola: 

Ingredients:

2 cups Oats of Your Choosing

½ tsp Ground Cinnamon 

¼ tsp Sea Salt 

¼ cup Natural Nut Butter 

¼ cup Honey 

½ tsp Vanilla Extract 

  1. Preheat oven to 325F. Grease a large cookie sheet and set aside.
  2. In a small bowl, mix together oats, salt and cinnamon. Set aside
  3. In a microwave-safe dish or on the stove-top, melt the peanut butter and honey together until smooth.
  4. Remove from heat and stir in vanilla.
  5. Stir in dry ingredients and mix until well combined.
  6. Spread mixture on prepared cookie sheet.
  7. Bake in the preheated oven for 20-25 minutes, or until granola is lightly browned, stirring the granola once halfway through.
  8. Remove from oven and let sit until cooled.

Banana Bread Granola: 

Ingredients:

1 Very Ripe Banana

1½ tsp Ground Cinnamon

¼ tsp Ground Nutmeg

1½ tsp Vanilla Extract

¼ tsp Salt

2 cups Rolled Oats

⅓ cup Shredded Coconut

⅓ cup Chopped Walnuts or Pecans

  1. Preheat the oven to 340F. Line a large baking tray with parchment paper.
  2. Mash the banana thoroughly. Mix in the cinnamon, nutmeg, vanilla extract and salt. Stir in the oats, shredded coconut and walnuts, and mix until well combined.
  3. Transfer the mixture to the baking tray. Bake for 22 – 28 minutes, mixing the granola at the 20-minute mark. Allow the granola to cool.
