Oatmeal Chocolate Chip Protein Cookies

I’m always looking for fun ways to add protein into my diet, I’m getting tired of protein shakes and adding a scoop or two into my morning oatmeal. This oatmeal cookies taste just like the real thing, but the added protein makes them a perfect pre-gym or post-gym snack.

Ingredients:

2 cups Oats

1/4 cup Good Quality Protein Powder 

1 tsp Baking Soda

1/4 tsp Salt

6 tbsp Butter, Softened

1 tsp Vanilla

1 Egg

1/2 cup Sugar

1/4 cup Semi-Sweet Chocolate Chips

  • You May Need a Small Splash of Milk If Your Dough Is Very Dry.
  1. Preheat oven to 350F.
  2. Use a food processor to finely grind one cup of the oats into a flour.
  3. Combine ground and whole oats, protein powder, baking soda, and salt in a small bowl.
  4. In a large mixing bowl, cream softened butter and sugar.
  5. Add egg and vanilla, mix until combined.
  6. Slowly incorporate the dry ingredients into the mixing bowl.
  7. Stir in the chocolate chips by hand.
  8. Scoop cookies into balls onto a cookie sheet lined with parchment paper.
  9. Slightly pat the cookies down with your hand, as they don’t spread too much on their own.
  10. Bake for 8-10 minutes, until the bottoms are just lightly starting to brown.
