Hummus Flat Bread with Sun-Dried Tomatoes, Pesto and Spinach

One of the best parts about this recipe (aside from the fact that it requires only a handful of minutes to prepare) is it’s healthful with plant-based nutrition. Flatbread made with whole grains (you can use store-bought whole wheat  or gluten-free flatbread, or even make your own), protein-packed hummus, and fiber from the veggies leads us to a healthful snack that we can use as a go-to any time of the day. Make this as a easy but crowd pleasing appetizer when ever I’m feeling a bit fancy at family dinners!

I like to use a roasted pine nut hummus or spinach artichoke hummus with this recipe but feel free to use whatever hummus you prefer and as much of it as you prefer.


3 Naan Flatbread

Hummus of your Choosing

2.5 oz Baby Spinach

1/4 cup Sun-Dried Tomatoes, Drained

2 tbsp Pine Nuts 

1/4 cup Pesto Sauce 

1/3 cup Feta Cheese, Crumbled

  1. Heat olive oil in a pan over medium heat, add the spinach and cover. Cook until spinach is wilted, stirring occasionally, about 2 minutes.

  2. Toast the naan/flatbread on a skillet or in the oven.

  3. Smear the hummus liberally over the naan. Layer with sauteed spinach, sun-dried tomatoes, and pine nuts. Drizzle with pesto sauce and sprinkle with cheese. Cut into pieces and serve.
